Science Book Club – Episode 19

I so often get the question, do you at them yourself, and I say yes, sure.

OK, so we produced the Insect Cookbook and in this book…it’s not just a cookbook but it has everything you want to know about sustainable food in terms of insects. And so we have in the book recipes and the description of how you prepare things and what it’s going to be, ranging from starters all the way to desserts, main dishes, everything.  We also have interviews with people [flicks through book]…so, we have an interview with Kofi Annan in the book where he tells how important insects are as a source of nutrition for the future.  We also have background information, where people eat insects and so here you see [holds up book] information on South East Asia or in Africa, what they eat, but also the sustainability issues are in the book. There’s information on environmental issues, why it’s so good to eat insects from an environmental stand point, who’s producing them, why they're producing them, interviews with chefs, and why they love to use them, so there’s the chef from Noma - the best restaurant in the world, elected four times in the last five years - and then there’s something on the back about where you can buy them, so this is really your ultimate source of information and not only a cookbook.

So what we have here is two sources, we have crickets, and they're lovely, and then we have mealworms - they’re not worms, but they're the larvae of beetles - and both of them in this case are freeze-dried with a little bit of salt.  And if you start eating these, I heard people in the audience [at his 2015 QED talk] say, wow, they're like nuts, and it’s like a snack when I’m watching television.  That’s in some countries how they use them. In Mexico, for instance, if you go to the cinema then you don’t buy popcorn but you buy ants that were popped, and so you eat popped ants. 

I so often get the question, do you eat them yourself, and I say yes, sure.   So, here, the cricket’s legs and wings have been removed but the rest is all edible [eats one] and they're wonderful.
